Chef Chalermwut Srivorakul (Nui) ~ Sous Chef 

 

Q. Introduce yourself; what is your role at Grain?

A. Hello, I am Chef Nui. I am the sous chef here at Grain Thailand. 

Q. What prior experiences do you have before joining Grain?

 A. I started off cooking at the Courtyard Marriott Hotel in Bangkok for about 2 to 3 years. After that, I had the privilege to cook for SRA Bua by Kiin Kiin restaurant at Siam Kempinski Hotel Bangkok for about 5 years. During this experience I had the opportunity to practice the study of molecular gastronomy, where I learned the importance of making food look aesthetically pleasing and different from the rest. From this, I had the honour of earning a Michelin star at the SRA Bua restaurant. Lastly, I had the chance to work for a fine dining Thai restaurant called Issaya Siamese Club, the Michelin Plate in Michelin Guide 2019 Bangkok. 

Q. Who & What inspired you to become a chef? 

A. My mom was the one who introduced me to cooking. She taught me all the basics, from cooking my own rice to cutting up vegetables. However, the way my cooking journey began is a unique one. I went to a hotel looking for a job, standing in line waiting to apply for a job but the line was very long. Then I saw another line which was much shorter and by chance it was for applying to become a chef. So I just went into that line to save time. From there, the rest is history. 

Q. Do you have any role models?

A. My role model is Chef berm from Sra Bua by KIIN KIIN. For me he personified the meaning of a chef. Knowing what is right but also accepting what is wrong. I admired his focus for being a chef and his drive to perfecting his art as he was always the first in the kitchen and last to leave. 

Q. When it comes to flavouring; what do you look for? 

A. For me it's about finding the right balance when it comes to flavouring a dish. It involves high level of attention and requires extensive amount of preparation & detail to create the perfect dish.

Q. What does cooking mean to you? 

A. Cooking is something I love to do, it means a lot to me when people are happy with the food I am cooking for them.
